Ingredients:

2 cups banana puree

1/3 cup butter (soft and at room temperature)

1 cup lightly packed brown sugar

2 tsp vanilla extract

1/3 cup honey

1/4 cup vegetable oil

2 eggs, large or extra large

2 cups all purpose flour

1 1/2 tsp baking powder

1/2 tsp baking soda

Directions:

1. Preheat oven to 350 degrees F.

2. Lightly grease a 9x9 baking pan and line with parchment paper. Mash the bananas. Just mix the ripe bananas at medium speed until they are a smooth puree.

3. Add all of the remaining ingredients and mix for only a minute until the batter is smooth.

4. Pour the batter into the prepared pan and bake for 40-45 minutes or until a wooden toothpick inserted in the center comes out clean.

5. Allow to cool at least a half hour before serving.
