15 tbsp or 225 g unsalted butter
15 tbsp or 225 g caster sugar
4 medium eggs
15 tbs or 225 g self-raising flour
1 tsp baking powder
8 1/2 tbsp or 125 g fresh cranberries
3 1/2 tbsp or 50 g pistachio nuts
9 tbsp or 75 g granulated sugar
1 orange
1. Soften the unsalted butter. Chop the pistachio nuts. Zest and juice the oranges. Preheat the oven to 180’C (fan 160’C) Gas 4. Place 10 M&S mini loaf cases on a baking sheet.
2. Cream the butter, sugar and orange zest in a large bowl until light and fluffy. Beat in the eggs, one at a time, then fold in the flour and baking powder.
3. Fold in two-thirds of the cranberries and nuts. Divide the mix between the cases, top with the remaining cranberries and nuts. Bake for 25-30 minutes or until a skewer inserted comes out clean.
4. Pierce the loaves a few more times with the skewer. Mix together the orange juice with the sugar then drizzle over the warm loaves. Leave to cool before serving.
