1 cup Guinness beer (or other stout) (cake)
1 cup + 1 tbsp butter (cake)
2/3 cup cocoa powder (cake)
1 3/4 cups confectioners sugar / icing sugar (cake)
2/3 cup sour cream (cake)
2 eggs (cake)
1 tbsp vanilla extract (cake)
2 cups plain flour (cake)
2 1/2 tsp baking soda (cake)
4 1/2 cups sifted confectioners sugar / icing sugar (icing)
1/2 cup butter at room temperature (icing)
8 oz cream cheese at room temperature (icing)
5 Tbsps Baileys Irish Cream (icing)
1. To make the dark chocolate guinness cake. Preheat oven to 350°F. Butter and line a 9-inch springform pan with parchment paper. Melt the butter into the Guinness in a saucepan over low heat.
2. Whisk in the cocoa and sugar and take the saucepan off the heat. Beat the sour cream with the eggs and vanilla in a separate bowl until combined, than add to the beer mixture. Whisk in the flour and baking soda until combined. Pour the cake batter into the prepared pan. Bake for an hour. Let cool completely in the pan.
3. To make the baileys cream cheese icing. In a mixing bowl cream the butter and confectioners sugar together until well mixed. Add the cream cheese in cubes slowly until incorporated. Add in Baileys. Continue mixing for 5 minutes until the icing is light and fluffy. Spread the icing onto the top of the cake and spread into an even layer.
