225 grams soft butter
1 & 1/2 cups caster sugar
5 eggs (room temperature)
2 teaspoons of vanilla essence
3 cups of sifted cake flour
3 teaspoons of baking powder
pinch of salt
1 cup of full cream milk
the zest of 2 naartjies
1. Preheat the oven to 180°C and grease a loaf cake tin with butter.
2. In a large bowl, beat the sugar and butter until light and fluffy. Add the eggs one at a time beating well after each addition. Next, add the vanilla essence and mix for another minute. Next, add half the dry ingredients and half of the milk and stir lightly , add the rest of the ingredients and stir until just combined, do not over mix as this will result in a tough texture and holes in the cake. Bake for 55 mins and when you insert a skewer it comes out clean.
3. For the icing. Stir in 3 tablespoons of naartjie juice into a cup of icing sugar. It should be quite thick. If you want it a bit less thick you may add more naartjie juice. Decorate with slices of naartjie and naartjie zest.
4. A simple and Delicious cake, great with a warm cup of tea or coffee.
