Ingredients:

1 cup sugar

2 eggs, at room temperature

3/4 cup buttermilk

1/2 teaspoon vanilla

1 1/2 cup flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

7 tablespoons butter, at room temperature

16 ounces, weight Cream Cheese

2 Tablespoons Creamy Peanut Butter

1 cup Mini Peanut Butter Cups

Directions:

1. Preheat oven to 350ºF. Prepare two 12-count cupcake pans.

2. Make the cake mix.(Eggs, buttermilk, vanilla, flour, baking powder and baking soda).

3. Fold in mini peanut butter cups. Pour into cupcake pans. Bake for 17 to 20 minutes or until a knife inserted in the center comes out clean. Remove pans from the oven and set them on a rack. Let cupcakes cool.

4. For the frosting, in a medium-sized bowl using a mixer, beat cream cheese until light and fluffy. Add sugar and beat until smooth and creamy. Then add peanut butter and mix until combined. Pipe onto and top of the cupcakes.
