2 cups all¬ purpose flour
2 teaspoons baking powder
dash of salt
2 eggs, divided
3 tablespoons sugar
1 1/2 cups milk
½ cup vegetable oil
1 teaspoon vanilla
1 tablespoon cocoa powder
1 teaspoon cinnamon (optional)
1. You will need 3 bowls. Separate egg whites and egg yolks into 2 bowls.
2. In a medium sized bowl, add dry ingredients: flour, baking powder and salt. Mix and set aside.
3. In another bowl, add wet ingredients: egg yolks, sugar, milk, canola oil and vanilla.
4. Whisk egg whites until stiff peaks in mixing bowl.
5. Pour wet ingredient mixture into the dry ingredient mixture and stir to combine. Gently fold in the egg white mixture into the batter until light and fluffy.
6. Separate the batter and gently mix in cocoa powder to one bowl.
7. Spray preheated waffle iron with non-stick cooking spray or brush with oil. Pour mix onto hot waffle iron. Cook until golden brown.
8. Serve warm with Maple syrup, powdered sugar, sour cream or fruit.
