
Ingredients
- 1 ½ cups all-purpose flour
- 1 1/3 cups sugar
- 2 tablespoons cornstarch
- 1 ½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 tablespoon white vinegar
- ½ cup fat-free milk
- ½ cup fat-free sour cream
- 1/3 cup liquid egg substitute
- ¼ cup lite corn syrup
- 1 teaspoon vanilla extract
- 1 ½ cups peeled and diced tart apples
- ½ cup confectioners’ sugar
- ½ teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees. Coat a 9 x 9 baking dish with nonstick spray; set aside.
- In a large bowl, combine the flour, sugar, cornstarch, baking powder, cinnamon, and salt.
- Pour the vinegar into a measuring cup and then add enough milk to make ½ cup.
- In a small bowl, stir together the milk, sour cream, egg substitute, corn syrup, and vanilla.
- Pour into dry ingredients; stir until combined.
- Stir in apples.
- Pour batter into prepared baking dish.
- Bake for 20 to 25 minutes, or until a toothpick inserted near middle comes out clean.
- For glaze, in a small bowl, whisk together the confectioners’ sugar, milk, and vanilla until smooth.
- Spread evenly over hot cake.
- Cool; serve warm.
