Ingredients:

2 1/2 chuck roast

1 onion, sliced thick or quartered

1 blood orange, sliced or juiced

pink salt and black pepper

2 cloves garlic, chopped (marinade)

2-3 tsp avocado oil (marinade)

1 tsp rosemary (marinade)

1 tsp coriander (marinade)

1/2 tsp ground mustard seed (marinade)

1 tbsp sherry or other wine vinegar (marinade)

1 tbsp honey or sugar (marinade)

1/4 cup wine for additional flavor (marinade)

Directions:

1. Scatter onion slices in the bottom of the pot.

2. Season roast with salt and pepper and lay it atop the onions.

3. Cover the roast with the marinade and top with orange slice or juice.

4. Cook on low 8-10 hours or high 6-8 hours.
