1/4 cup paprika
3 tablespoons ground black pepper
1-3 teaspoons cayenne (depending on your spice preference)
1 tablespoon dried thyme
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon white pepper
1 teaspoon ground bay leaves
1/2 cup or less sea salt
2 chicken breasts
2 tilapia fillets
1. Mix all dry ingredients together in large bowl with a whisk or fork.
2. Preheat grill to medium heat. On two separate trays, one for chicken and one for the fish, scatter an even layer of Cajun Spice Rub. Rub the chicken breasts and fish filets lightly with oil. Place chicken and fish onto the spice rub and flip doing the same on the other side to coat fish filets and chicken breasts evenly on each side with the spice rub.
3. Prepare fish and chicken for grill. Follow grilling guidelines for chicken. Fish is similar, but easier to grill on a foil-covered grill. Lightly oil the foil to prevent sticking. Rather than grill mark, cook fish on one side for about 1 minute, just to sear evenly, then flip before fish has cooked half way. It is easier to flip this way. Close lid and finish cooking through to the middle. Cook times depend of fish filet size and type. Tilapia will take approximately 10 - 15 minutes.
