Ingredients:

2 cups water

1 med. onion - chopped

3 med. potatoes - peeled, diced

1/2 tablespoon salt

1/2 tablespoon tablespoons celery salt

1/4 tablespoon pepper

16 oz. tub sour cream - low fat

3 slices bacon - fried crisp, crumbled

Directions:

1. In a saucepan, combine the first 6 ingredients.

2. Bring to a boil, then reduce to a simmer for 20 minutes, until potatoes are softened.

3. Remove from heat; do not drain.

4. Stir in the sour cream.

5. Blend smooth in blender, if desired.

6. Top with crumbled bacon and serve with rye bread.
