1 kg tomatoes
4 slices bread – cut in to small pieces, sides removed
1 red bell pepper – seeded and chopped
1 chopped cucumber
1 chopped onion
1 tablespoon vinegar
2 tablespoon olive oil
1 garlic clove, minced
1/2 teaspoon freshly ground pepper
1/2 teaspoon parsley or basil
1 cup water, salt to taste
1. Boil the tomatoes in water. Remove and peel the skin and place in large bowl.
2. Place the bread in another bowl and add some water.
3. Blend the tomatoes, bell pepper, cucumber, onions and garlic in a food processor.
4. Add the bread, olive oil and vinegar and blend again.
5. Add the seasonings and mix well. Chill in refrigerator till serving time.
