Slow Cooker Mushroom Chili

Ingredients:

1 onion, diced

2 garlic cloves, minced

1 green bell pepper, chopped

1 cup fresh or frozen corn kernels

1 zucchini, diced

8 ounces mushrooms, sliced

3 cups diced tomatoes

3 cans kidney beans

1/2 cup water

2 tbsp. chili powder

2 teaspoons cumin

1/2 tsp oregano

dash of cayenne pepper or to taste

Directions:

1. Combine all ingredients in a Slow Cooker. Cover and cook on low for 7 hours. Put the onion, garlic, green pepper and zucchini into the food processor and chopped everything that way.
