Ingredients:

2 lbs. of chicken cooked & chopped

1 pkg. of Vermicelli (15 mins before serving)

1 small onion chopped

1 bunch green onion chopped

1/2 bell pepper chopped

5 stalks celery chopped

2 cups carrots sliced

1 can Ro-tel Tomatoes

1 can 16 oz. tomato sauce

1 can 16 oz. chopped tomatoes

2 tsp. garlic

2. tsp. oregano

1/2 cup cilantro

salt & pepper to taste

12 cups water (sometimes more)

Directions:

1. Put everything in a Crock-Pot (except vermicelli). Cook till the chicken is tender, chop into small bite size pieces.

2. Cook for 4 hours on medium heat then in Crock-Pot.
