1 tbsp lard or bacon fat
1 pound grass-fed ground beef
6 cups salad greens
2 medium-sized sour pickles
4 ounces grass-fed cheese
1 small white onion
1/2 pound tomatoes
mayonnaise
ketchup
1. Melt the bacon fat or lard in a heavy skillet over medium-high heat.
2. Brown the ground beef in the hot fat, then transfer it to a serving bowl and allow it to cool about 5 minutes.
3. Plate the greens, then spoon the ground meat over the greens.
4. Top with pickles, cheese, onion and tomatoes, then serve with mayonnaise and ketchup.
