5-6 cups fresh unsweetened blueberries or frozen blueberries
1 1/2 t. lemon juice
2 cups flour
2 cups sugar (divided 1-1)
1 cup milk
1/3 cup butter (cut in small pieces)
2 t. baking powder
1 t. salt (divided 1/2-1/2)
2 t. cornstarch
1 1/2 cups boiling water
1. Spread berries or fruit in well-greased 2 1/2 qt. shallow oven dish or 9×13 pan. Sprinkle with lemon juice. In a bowl stir in flour, 1 cup sugar, milk, butter, baking powder & 1/2 t. salt until well blended. Batter will be fairly thick.
2. Spoon over berries spreading to the edge of dish. Set aside. In a small bowl mix 1/2 t. salt, 1 cup sugar & 2 T. cornstarch. Sprinkle this dry mix over the batter. Pour boiling water over all.
3. Bake in pre-heated oven at 350 for 1 hour or until golden brown, glazed & bubbly.
