1 lb ground beef
1 onion, chopped & divided
1 clove garlic, minced
1 salt & pepper, to taste
1 can sloppy joe sauce 15oz. or homemade equivalent
1 can cream of mushroom soup 10.5oz.
16 oz of velveeta cheese, shredded or crumbled & divided
32 oz bag of tater tots, frozen
1. Preheat oven to 350 degrees.
2. Brown the beef with salt, pepper, garlic & 1/2 of onion, drain well. Wipe out skillet of remaining fat. Mix the Sloppy Joe sauce & mushroom soup into the same warm skillet. Add cooked beef back to skillet and mix well. If your skillet is oven safe, top beef mixture with half shredded Velveeta, then top that with Tots and sprinkle remaining cheese on tots. Place uncovered skillet in the oven 45-1hr. Start checking for doneness at about 45min as not to burn the cheese.
3. If you don't have an oven safe skillet, spray a 9x13 dish with Pam or butter liberally. Continue to construct casserole and bake as stated above.
