2 tbsp butter, softened
1 c sugar
2 c flour
3 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1 c milk
2 c whole cranberries, uncooked
1/2 c butter (sauce)
1 c sugar (sauce)
3/4 c cream (sauce)
1. Preheat oven to 350 degrees. Lightly grease a 9x13 pan.
2. In a large bowl, mix together butter, sugar and flour. Add baking powder, salt, vanilla and milk. Stir in cranberries. Pour into prepared pan. Bake for 40-45 minutes.
3. For butter sauce, lightly brown butter in a small sauce pan over medium heat. Add sugar and stir 1-2 minutes. Add cream and cook 3-4 minutes. Serve hot over cake. Serves: 12 -16
4. Can add lemon and orange zest to the cake. Can also use juice from a orange and lemon in a confectioners' sugar, milk & butter frosting.
