Ingredients:

1 small onion, chopped

2 tablespoons vegetable oil

1 cup sliced fresh mushrooms

1 lb zucchini, sliced

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon dried thyme

1/4 cup grated parmesan cheese

Directions:

1. Sauté onion in hot oil until tender.

2. Add mushrooms, zucchini, salt, pepper, and thyme.

3. Stirring often, cook over low heat 5 to 10 minutes or until zucchini is -tender. Sprinkle with cheese.

4. Serve immediately.
