Ingredients:
2 1/2 teaspoons yeast
1 1/2 cups hot water or milk
1 cup mashed potatoes
2/3 cup sugar
2/3 cup softened butter
2 eggs
1 1/2 teaspoons salt
6-8 ap cups flour
Directions:
- 1. Dissolve yeast in water in a large bowl. Stir in mashed potatoes, sugar, butter, eggs, salt, and 3 cups of the flour. Beat until smooth. Mix in enough remaining flour to make dough easy to handle, about 3 or 4 cups. Turn dough onto a lightly floured surface and knead until smooth and elastic, about 5 minutes. Place into a large, greased bowl. Flip the dough so that the greased side is up and refrigerate for at least 8 hours, but no longer than 5 days.
- 2. You can freeze this dough for up to 3 months.
- 3. To use it for bread: Break off 1/2 to 1/3 of the dough roughly. Form the dough roughly into a loaf shape, place in a greased loaf pan, let rise about an hour and bake at 350F for 25-30 minutes.
