Ingredients:
3 cups semisweet chocolate chips
1 cup butter
4 ½ cups granulated sugar
17 oz. jar marshmallow creme
12 oz. evaporated milk
2 tsp vanilla
1-2 cups chopped walnuts
1 cup mini marshmallows
Directions:
- 1. Butter a 13" x 9" pan and line it with parchment paper. Put chocolate chips, butter, and marshmallow cream in a mixing large bowl. Set aside.
- 2. In large (7-8 quart) stock pot, bring milk and sugar to a boil over medium-high heat, stirring constantly until mixture comes to a full rolling boil. Continue stirring frequently for exactly eight minutes. Pour hot mixture over ingredients in bowl.
- 3. Stir until well mixed, then beat with an electric mixer until fudge begins to hold its shape. Beat in vanilla. Stir in nuts and marshmallows if you like them.
- 4. The fudge "holds its shape" when ridges and bumps remain on the surface of the chocolate when you lift the mixer away. About 15 min.
- 5. Pour into your pan and put in refrigerator if you want to cool fast. This is 5 lbs of fudge.
