1/2 cup milk
1/2 cup flour
2 large eggs
2 tablespoons sugar
1 teaspoon salt
1 teaspoon vanilla
1. Preheat oven to 425°.
2. In blender, food processor, or ninja, mix all ingredients together at high speed for 10 seconds. Let stand for 20-25 minutes.
3. Put 2-3 tablespoons butter in oven proof frying pan. Place pan in oven until hot and butter is melted. Swirl butter to coat frying pan. Pour batter into hot pan and bake for 15-20 minutes until edges curl up and center is firm. Check often.
4. Serve with fresh lemon juice, powdered sugar, and/or maple syrup.
