Loaded Mexican Cornbread

Ingredients:

2 boxes jiffy cornbread mix

1 can cream style corn

2 chopped jalapenos

1½ c mexican cheese, plus more for garnish if desired

1½ lb hamburger

1 can fiesta blend canned corn with black beans, drained

small onion chopped

1 can rotel tomatoes, drain half the juices off

1 - 2 clove garlic, minced

jarred jalapenos, chopped

Directions:

  1. 1. Mix 1 cornbread mix according to box instructions and add 1/2 can of corn.
  2. 2. Pour into greased 9x13 baking dish ,
  3. 3. Saute hamburger with onion until browned then stir in minced garlic, Fiesta blend canned corn with black beans and Rotel tomatoes. Simmer until thickened, drain if needed then pour over cornbread mixture.
  4. 4. Mix 2nd box of jiffy mix and remaining corn together and pour over meat mixture. Top with cheese and chopped jalapenos.
  5. 5. Use box cooking time and temp: may take a little longer test with tooth pick.
