Mushroom Ramen Soup

Ingredients:

bacon bits

two pack ramen noodles (discard seasoning packs)

sliced mini Bella mushrooms

two cloves fresh garlic

sliced green onions

1 cup of sliced kale

2 table spoons soy sauce

1 tablespoon roasted sesame oil

splash of rice wine vinegar

ground ginger

few shakes of sea salt and a few shakes of pepper

4 cups chicken broth

Directions:

  1. 1. Fry up bacon bits first in large pan, remove to add in later.
  2. 2. Then sauté mushrooms and garlic in same pan. Pour in chicken broth and other liquids. Add in dry spices. Taste and adjust spices depending on how much flavor you want. Add in ramen noodles and kale and cook for 3 to 5 minutes until noodles are done and kale has gone soft.
  3. 3. Then add in green onions and bacon bits. The most tedious part was chopping everything, but it was super yummy.
