Ingredients:
2 pounds halved, pitted prune plums
2 cups sugar
1 teaspoon grated lime zest
1 tablespoon fresh lime juice
salt
Directions:
- 1. In a saucepan bring plums, sugar, lime zest, lime juice, and a pinch of salt to a boil, mashing plums with a potato masher.
- 2. Cook, stirring often, until mixture has the consistency of thick honey.
- 3. Remove skins using a fork. Let cool.
- 4. Refrigerate until ready to use (up to 1 month).
