Ingredients:
2 vine ripened tomatoes diced
½ red onion finely diced (about ¼ cup)
½ jalapeño pepperr finely diced
½ cup freshly chopped cilantro
juice from 1 lime (don’t forget microwave trick)
1 teaspoon olive oil
salt and pepperr to taste
Directions:
- 1. Preheat oven to 350.
- 2. Clean the brown inside of 2 Portobello mushrooms with a melon baller or spoon. Spray both sides with olive oil and add salt and pepperr. Bake in a 350 oven for 25-30 minutes cleaned side up. If any liquid accumulates in the center of the mushroom drain it out. Remove from oven and let cool for 15 minutes.
- 3. Top with Pico de Gallo and serve.
