Ingredients:
1 pound red snapper (or other whitefish) fillets
2 tablespoons butter
1 clove garlic
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
2 medium tomatoes
salt
pepper
Directions:
- 1. Cut the tomatoes in half and grate them on the large holes of a box grater until only the skins remain. Strain the juice from the pulp, catching the juice in a bowl.
- 2. Bring a saute pan to medium heat with the butter. Add the garlic and cook 1 minute. Add the thyme, rosemary, and tomato pulp (not the juice) and cook for 2 minutes.
- 3. Put the fish fillets in a baking dish and sprinkle lightly with salt. Spoon the tomato mixture onto the fillets.
- 4. Add a few spoons of the tomato juice around the fillets (not on top). Sprinkle with black pepper.
- 5. Bake at 350°F for about 20 minutes or until the fish is tender-firm.
