medium sweet potato (200g)
2 bacon medallions
30 g lightest Philadelphia
50 g eatlean cheese
1/2 red onion
1/2 red bell pepper
sour cream / coriander to dress
1. Preheat your oven to 180 degrees. Place the sweet potato in the microwave for 8 mins (depending on size) or bake prior to starting the recipe.
2.⠀Cut your medallions, red onion, red bell pepper into small chunks and fry off. In the meantime, grate the cheese. When the sweet potato is soft through, slice in half-length ways and scoop out the inside. Combine the bacon and onion mix with the sweet potato mash and Philadelphia. Mix well.
3. Fill your potato skins and lay on a baking tray. Bake for 20-30 minutes until crispy.
