carrot chopped 1 cup
capsicum chopped 1 cup
cauliflower 1 cup
sweet corn 1 cup
soy sauce 2 tsps
pepper powder 1 tsp
salt 1 tsp
1. Rinse the millets couple of time until the water is clear. Add some water for soaking. Soak the millets 4 hours. After 4 hours, drain the water and add 3 cups of water for 1 cup of millets. Cook on medium heat until all the water is absorbed and millets are still a little firm. The millets should not be sticky or over cooked.
2. Heat 1 tsp oil in a nonstick pan on medium flame. Add 1 tsp chopped garlic and let it sizzle for about 15 seconds. Then add cooked millets. Stir fry continuously and try to whole millets with the oil. Then add 1 tsp soy sauce and ½ tsp pepper powder, stir fry for few minutes. Remove from the pan and set aside on a large plate to cool.
3. In the same pan, heat 1 tsp oil again. Add the chopped carrots, cauliflower, capsicum and sweet corn one by one, cook for 5 minutes by adding some water. After that add 1 tsp soy sauce and ½ tsp pepper powder. Continue to stir fry for another 1 or 2 minutes. Now add the cooked and cooled millets. Stir and mix everything well. Add lemon juice and mix well and adjust salt if required.
4. Serve warm with favorite hot sauce.
