Ingredients:

1 pound boneless skinless chicken breast frozen is fine

1 yellow onion chopped

1 teaspoon salt

1 teaspoon pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1/2 teaspoon chili powder

2 cups chicken broth

8 tortillas (tacos)

1/2 cup tomato diced (tacos)

1/2 cup Mexican cheese blend shredded (tacos)

1/4 cup cilantro chopped (tacos)

Directions:

1. Add chopped onion to the bottom of your crock pot.

2. Place chicken on top of the onion. Don't worry about defrosting if your chicken breasts are frozen.

3. In a small bowl combine the salt, pepper, garlic powder, onion powder, cumin, and chili powder. Sprinkle seasoning over the chicken. Pour chicken broth into crock pot over the chicken.

4. If using frozen chicken cook on HIGH for 3-4 hours or LOW for 6 hours. If using fresh chicken cook on LOW for 3-4 hours

5. Once chicken is done cooking, remove it from the crock pot. Shred chicken with two forks and add back into the crock pot with the cooking liquid. This will help keep your chicken moist.

6. To serve: Place chicken in tortilla and finish off with your favorite taco toppings! (Let the extra liquid drain back into the crock pot a bit before putting chicken in your taco.)

Bon Appetit!
