1 hen 1 1/2 lbs, split in half
1 t salt & 1/2 t pepper
1/2 stick cinnamon or 1/8 t ground cinnamon
1/4 c fresh sage, loosely packed or 2 1/2 t rubbed sage
1 lemon, zest only
5 cloves garlic, peeled
1 c milk
dry seasoning and zest, placing cloves of garlic
