8-16 slices deli ham, sliced thin
4 slices mozzarella or cheddar cheese
4 boneless, skinless chicken breasts, pounded thin to 1/4-inch thickness
salt
pepper
1 1/2 cups chicken broth (sauce)
1/2 teaspoon poultry seasoning (sauce)
1/4 teaspoon onion powder (sauce)
1/4 teaspoon garlic powder (sauce)
1/8 teaspoon black pepper (sauce)
1/4 teaspoon salt (sauce)
1/4 teaspoon dried parsley (sauce)
dash paprika (sauce)
1 1/2 cups milk, or milk alternative, divided (sauce)
5 tablespoons corn starch / cornflour (sauce)
1. Pound the chicken breasts to about 1/4-inch thickness. Depending on how long and thick your deli ham is, top the chicken with 1 to 2 slices of ham and a slice of cheese. Salt and pepper to taste.
2. Roll the chicken breast up and secure with a toothpick. Place seam-side down in a greased 5-quart slow cooker.
3. In a medium sauce pan mix together the chicken broth, 1/2 cup milk, and seasoning and bring to a boil.
4. In a separate bowl, whisk together the remaining milk and cornstarch and add to the chicken broth mixture whisking continuously until mixture returns to a boil and thickens.
5. Pour the sauce over the chicken. Sprinkle with seasoned bread crumbs. Cover and cook on high for 4-6 hours or on low 6-8 hours.
