75 g/3 oz butter, cubed
225 g/8 oz self-raising flour
100 g/4 oz caster sugar
75 g/3 oz mixed dried fruit
1⁄2 teaspoon ground ginger
1 egg
50 ml/2 fl oz milk
1. Preheat the oven to 200°C/400°F/Gas mark 6. Grease two baking trays.
2. Sift the flour into a large bowl, and rub in the butter with your fingertips until the mixture resembles fine breadcrumbs. Stir in the sugar, dried fruit and ginger.
3. In a bowl, whisk together the egg and milk. Add the dry ingredients and mix to a stiff dough. Drop rough heaps of mixture, about 3 tablespoons at a time, onto the baking trays. Bake for 10–15 minutes until golden. Cool on a wire rack.
