Pumpkin No Bake Cookies

Ingredients

• ¾ cup (1½ sticks) unsalted butter
• 2 cups granulated sugar
• 2/3 cup milk
• 1 tsp vanilla extract
• ¼ cup powdered vanilla coffee creamer
• 1 3.4-ounce package dry instant pumpkin spice pudding mix
• 1/8 tsp salt
• 1/4 tsp pumpkin pie spice
• 4 cups minute oats

Directions

1. Add butter, sugar, milk, and vanilla to a large pot and bring to a boil. Keep on a rolling boil for 2 minutes.
2. Remove from heat and stir in remaining ingredients, once fully combined, plop large spoonfuls onto wax paper and let set for about an hour. If it's raining or humid, there is a chance that the cookies will not set completely.
