Ingredients:

1 loaf of stale bread

300 ml milk

300 g dried mixed fruit

40 g mixed beel

1 quince or eating apple (grated)

3 tbsp soft dark brown sugar

2 tbsp of plum jam

40 g self raising flour

2 eggs

a squeeze of fresh lemon juice

1 tsp cinnamon

1 tsp mixed spice

100g butter, melted

granulated sugar to sprinkle over

Directions:

1. Pre-heat the oven to 140 degrees and grease pan, slice bread thinly and soak in milk till softened.

2. Once bread has absorbed milk, heat bread with fork until it foams like creamy mush stir grated apple remaining ingredients and half of the melted butter until well combined pour mixture in pan then cover with remaining butter.

3. Bake for for ¹½ hours, when baked sprinkle sugar and serve with ice-cream or custard or allow to cool and eat as cake.
