1/2 cup all purpose flour / plain flour
1/4 cup butter (not margarine) melted
4 large eggs
3/4 cup sugar
pinch of salt
1 tsp. vanilla extract
1 tsp. coconut extract
1 cup sweetened flaked coconut (plus a little extra for the top)
2 cups whole milk
1. Put all of the ingredients in a blender and blend for 30-60 seconds, depends on your blender, until well combined.
2. Pour into a buttered 9" pie plate (place on a baking sheet to make it easier to handle)
3. Sprinkle a little more coconut over the top.
4. Place in a 350 degrees F / 177 degrees C / 4 Gas oven for 1 hour.
5. Remove and allow to cool slightly before slicing.
