1 cup oat flour (made homemade by pulsing oats in food processor)
1 cup all-purpose flour
1/2 cup old-fashioned oats
1/3 cup coconut sugar
1 tsp cinnamon
1 tsp ginger
2 tbsp Wild Friends Foods gingerbread peanut butter
1 heaping tbsp baking powder
1 cup almond milk
1. Transfer to a lightly floured surface, knead dough briefly, and then form a circle. Cut into 6 even slices, transfer to parchment-lined baking sheet.
2. Bake at 425 for 15 minutes. Best served fresh with melty icing (mix of almond milk & powdered sugar).
