200 g. oats
100 g. raisins
150 ml. vegetable oil
100 ml. apple juice (optional)
200 g. caster sugar
1 large egg, beaten
1 tsp. ground cinnamon
1 tsp. vanilla extract
140 g. plain flour
¼ tsp baking soda
1. Heat oven to 180c/350f.
2. Soak the raisins in apple juice for 30 mins (just use boiling water if you have no apple juice).
3. Mix together the veg oil and caster sugar. Beat in the egg, cinnamon and vanilla extract.
4. Sift the flour & the baking soda with pinch of salt into the bowl.
5. Add the oats and then finally mix in the raisins and the apple juice.
6. Bake for 15-20 mins until golden brown. Leave to cool on the trays for 5 mins then transfer to a wire rack.
